Heat the oil in a pan over a medium heat. Add the leeks sliced and fry for 2 - 3 minutes.
Add the flour, stir well and cook for 1 - 2 minutes. Reduce the heat and slowly stir in JUST MILK. Keep stirring until the sauce has thickened. Simmer gently for five minutes.
Add in the prawns and season with salt and pepper to taste.
Place half the sauce into a deep pie dish. Place the haddock fillets on top, then cover with the remaining sauce. Add the sliced potatoes and season with some more black pepper. Top with the sliced lemon.
Place the dish on a baking sheet and bake for 40 - 45 minutes, until the potatoes are golden and the fish is fully cooked.
